Quinoa salad with grilled chicken and mixed greens



1 whole chicken breast that’s been grilled or roasted

1 bag mixed greens

2 cups cooked Quinoa

Juice 1 lime

2 cups chopped tomato

¼ red onion diced

½ cup chopped cilantro

¼ cup olive oil

1 avocado diced

 

Salt and pepper to taste

 

In a bowl Combine cooked Quinoa with the lime juice, vegetables, olive oil, cilantro, salt and pepper to taste. Set aside.

Be sure to precook the chicken grilled or roasted I happen to have some grilled so I used that.

 

In a large bowl add the mixed greens followed by the Quinoa toss together.

Place the grilled or roasted chicken over the salad and serve it up.
