2 lbs Chicken tenders
2 tomatoes
diced
1 bell
pepper cut into large pieces
1 onion
diced
6 cloves
crushed garlic

chopped cilantro

zucchini cut into 1/4's
5 cardamom

Salt.pepper
to taste
Maggi cubes
to flavor (optional)
¼ teaspoon turmeric
1/4 teaspoon cumin
3 cloves
2 dried
lemons
1 ½ tablespoon curry powder or Kabsa spice mix
2 tablespoons tomato paste
Broth or
water just enough to cover about 2 1/2 cups.
In a pot add spices,tomato,bell pepper,onions,garlic and cilantro. cook until soft but not golden, add the chicken and brown on each side don't worry about fully cooking just ensure to develop some flavors.
add tomato paste, broth dried lemon and water or broth. bring up to a boil and reduce heat cook until chicken is tender and sauce reduced a bit within last 30 mins place zucchini in to cook on its own doing this at the end prevents it from becoming mushy.
once you notice all of the vegetables are cooked and the sauce thickens up taste to adjust any salt.
serve with some fresh flat bread or rice.
