or even better grill the chicken before hand.
1 onion sliced
1/4 cup chopped or grated carrot
1/2 cup parsley chopped
1/4 cup chopped cilantro
1/2 cup pine nuts
1-2 teaspoons paprika
3 cloves crushed garlic
1 teaspoon 7 spice or all spice
salt and pepper to taste
1/2 teaspoon sumac
1 tablespoons pomegranate molasses OR lemon juice.

In skillet,on med heat add oil followed by onions,carrots parsley and garlic saute until onions are soft.
Dice the pre cooked chicken.
To the pot add pine nuts saute until they become golden brown.
Add in cilantro,spices followed by the chicken you may lower the heat because the chicken has already been cooked you just want to get the flavors together.
mix well drizzle with pomegranate molasses add salt,pepper taste to adjust anything.
Place in bowl use for sambosak or even in puff pastry or phillo dough.

NOTE:To make it even better you may allow the mixture to cool down
then add in 1-2 cups of shredded cheese. sambosak filling is the best way I get rid of leftovers so deff use leftover chicken if you have some on hand. and you may use lemon juice in place of pomegranate molases.
