Lebanese Country side lentil and Potato Soupشوربة العدس والبطاطس

This is a old style Lebanese soup recipe made in mountain regions.
Traditional this would have been cooked on a open fire in a clay pot.
I hope you enjoy this old world soup made in a modern kitchen.

1 1/2 cups red lentils
1 white onion sliced
3tablespoons butter with1 teaspoon oil
1-2 teaspoons cumin
juice of 1 lemon
1 large potato diced
salt to taste
6 cups water


How2:
In a pot add water,followed by the lentils. bring to a boil then reduce heat. cook until the lentils are soft.
Once soft you may puree 1/2 of lentil mixture this was my addition to it but it can be left in whole pieces which give the soup more texture.
peel and cut the potato into cubes, put into the pot of lentils add a bit more salt.
Cook until the potatoes are tender.
In a skillet add oil and butter saute onions until yellow and soft pour directly over the soup. In most lentil soup recipes we saute onions first this recipe called for putting them in last but any order is ok)
Lastly its seasoned with cumin taste the salt and serve it up with lemon juice and pita bread.

notes: You may add veg maggi cube instead of salt I tried to keep this as authentic as it was made in the mountains but definitely play around with how much cumin you like and the texture of the lentils.ENJOY!
