2 1/2 ricotta cheese
2 cups mozzarella cheese( save some for top)
1 cup pesto
1 box frozen chopped spinach thawed.
1 egg
1/2 cup Parmesan cheese
salt/pepper
how2:
Thaw and squeeze the spinach of its excess liquid. add bit salt pepper to it to session.
in a baking dish mix,eggs,pesto,cheeses,pepper ,and spinach together.
In a pot add water bit salt, cook the rigatoni , be sure to not over cook it.
once its cooked strain, and mix into the ricotta spinach mixture.
Mix well until it is well combined.
Bake at 400df for 35-40mins, once it cooks top and is slightly golden born, top with mozzarella and place in oven for about 3-5 mins to melt the cheese,
Take out of oven, let it sit for a few mins before serving so it doesn't fall apart.
ENJOY
Note: you can serve this the way it is or with some marinara sauce on the side.
