Crust:
2 cups crushed cookies
3 tablespoons butter
2 tablespoons sugar
Filling:
2 cups Milk
2 eggs yolks
1 egg
1/3 tablespoons butter
1/4cup sugar
1/4 cup corn starch
1/4 teaspoon vanilla
Toppings:
1/2 cup crushed pineapple
1-2 kiwis depending on the size
1/2 cup sweetened shredded coconut
few candy or maraschino cherry's for color

Filling:
prep everything so you have it ready. beat eggs.
In a pot on med- low heat add milk and sugar. cook until sugar desolves and milk is about to boil lightly.
once this happens you need to temper the eggs meaning to bring them to the temperature of the pot.
lower the temp so the milk does not over cook. and slowly to the bowl of eggs add few ladels of milk one at a time. when you do thsi you have to Whisk the eggs so that they dont cook. Do this with a few ladles full they eggs will look creamy but not cooked.
once the eggs are brought up to temperature, to the milk add corn starch whisk to be sure it desolves.
While whisking add the eggs. contune to whisk so they don't curdle or cook..
increase the heat keep string until the cream thickens.
Once it becomes super thick turn the heat off and remove from the stove. mix in the butter and vanilla.
Crust:
Take the crushed cookies add to the baking dish.
add the melted butter, sugar, mix well.
Press evenly on the baking dish bake for 10-15mins.
Cool before adding the filling.
How to assemble:
Place the warm cream onto the crust.
allow it to cool slightly and the cream form a film on the top this will insure the toppings wont fall threw.
You may design the topping any way you like you may also add mangoes and other fruits you like.
I started off by adding coconut around the edges.
Followed by kiwis.
then the crushed pineapple in the center.
topped with the candy cherries.
cool for at the least 2 hours before serving so it sets well.
