Mujadara Safra (Lebanese Lentil Puree)

1 1/2 cups red lentils
4 cups boiling water
1 1/2 teaspoons salt
1 onion, diced
2 tablespoons oil

How2:
In a pot on med heat add oil. once the oil is heated add onions,
Saute onions until soft but not golden.
Add the dry lentils, followed by the water.
Bring to a boil cover reduce heat.
cook for about 15-20mins go back and forth to stir to prevent burning.
cook until the lentils split and are soft. It will look thick you may leave it chunky or use a whisk to break up some of the lumps.
Add salt at the end. Mix well.
Pour into a deep serving dish or pyrex allow it to cool so it hardens.

This is a very basic dish so its served with a fatosh-salad (Click for Recipe), pickles,hot pickles peppers, pita bread on the side.
