
1 bunch Swiss chard
juice of 1 Lime
4 cloves crushed garlic
1 large onion
1 tablespoon cilantro sofrito (OPTIONAL)
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup diced cilantro (Save some for a garnish)
1/4 cup water
HOW2:
note: i had blanched my swiss chard a few days before i made this recipe so the pictures appear different then when you make it with fresh leaves.
Clean and chop the swiss chard, then set them aside.
In a pot add some olive oil,and onions. Cook until golden on med-low heat.
After the onions are cooked remove from pot and set them aside.
add 1 tablespoon oil to the pot on med-low heat and add the swiss chard toss and turn in the pot until the leaves reduce in size.
Once the leaves start to cook down, add salt,pepper,garlic, cilantro,and the cilantro sofrito.Mix well.
Add the Water and combine them all well. Reduce heat to low allow it to simmer for 1/2 hour or until the leaves and stocks are tender.
Once they are cooked and the Liquid has reduced, turn heat off then add the lime juice.
Place in a plate garnish with chopped cilantro and a bit of extra virgin olive oil.
