
1 whole roasted chicken shredded (leftovers will work well)
1 large onion diced
3 cloves crushed garlic
1 bell pepper diced
1 small container chopped mushrooms ( about 1 1/2 cups)
1/4 teaspoon black pepper
1 /4 teaspoon salt
1/2 cup mozzarella cheese
2 tablespoons oil
1 teaspoon thyme
pinch Cayenne or hot sauce
How2:
In a skillet add oil, saute onion,peppers, until soft on med-low heat dint brown.
Add mushrooms and garlic continue to saute until mushrooms have browned. add shredded chicken ,black pepper,soup base, Cayenne pepper, and thyme.
Turn broiler on.
in a small pie glass pan add a little oil spray to prevent sticking add chicken vegi mixture. top with mozzarella cheese. bake under broiler until cheese is melted and bubbly.
serve with rice or bread as a side or main dish
