This is a healthier version of a popular street food you would eat in Lebanon which is a fried vegetable sandwich. in this recipe I just roasted the components instead of fry them and wrapped them just like you would get in Beirut. to watch my step by step video please check out my Instagram account Spreading the sofra
Vegetables
1 whole large eggplant
1 whole cauliflower
2 red peppers
olive oil
salt to taste
Taratoor/Tahini Sauce
1/4 cup tahini paste
1-2 lemons juiced
2 table spoons water
pinch of salt
This recipe can vary depending on how thick of thin you prefer your tahini sauce. aka tarator
How 2:
Preheat the oven to 400df
prep the vegetables by cutting up the cauliflower florets and partially peeling the eggplant I like to salt them and allow them to sweat for about 1/2 hour in a strainer in the fridge.
once ready place all the prepared vegetables including bell peppers on baking sheet drizzle with a bit of olive oil roast for about 45min until golden brown. time may vary due to thickness of the cut or size you cut the vegetables.
while that's cooking prepare the tahini sauce by whisking lemon juice and water a little at a time into the tahini paste until it thicken and emulsifies into a sauce season with a dish of salt.
How 2 assemble: Place vegetables in pitta-bread drizzle with tahini sauce you may add pickles and some lettuce if you prefer.
