1 piece celery,diced
1/4 cup carrots,diced
1/2 onion,diced
1/2 cup chopped
2 vegetable Maggi cubes(Optional)
1/2 cup Freekeh(Fire roasted wheat)
4 1/2 cups water or homemade chicken or veg stock
1 teaspoon 7 spice
1 bay leaf
2 cardamom pods
1 small Cinnamon stick
1/8th teaspoon black pepper

HOW2:
Prep all of the vegetables, and chicken set them aside. Also it would be good time to wash the freekeh a few times.
Once everything is ready, season the chicken with a bit of the 7spice.
In a pot on med-high heat add chicken brown for a bit but not to cook it all the way this is just to develop some flavor and color.
Add the onions,celery and carrots, followed by the spices and veg cube. you may lower the heat slightly so that the vegetables get a chance to cook and become softened a bit.this should take about 10-15mins
Strain the freekeh and add it to the pot you may increase the heat slightly at this point saute to get them a bit toasted this prevent them from becoming mushy.
Once slightly toasted they will begin to get bigger at this point add the water or stock, bring up to a boil,cover reduce heat to med-low. cook for about 35 Min's until the freekeh is cooked chicken and vegetables are tender and the soup is slightly reduce taste to adjust any salt.
serve up nice and hot.
