Struffoli are lil crispy honey balls traditialy made around christmass time in Italan households. They are diffrent than arabic style Awamat which are crunchy yet soft in their center.I found Stiffoli much easier to may anyway :) So I hope you enjoy this recipe.
Dough:
3 1/3 cups flour
4 eggs
1/2 teaspoon butter
1 tablespoon sugar
zest of an orange, grated
1 pinch salt
1 pot oil for frying
1 teaspoons vinegar
Honey Glaze:
Juice of the orange
1 1/2 cups honey
Few tablespoons sprinkles.
How2:
To make dough place ingredients into a dough mixer or in a food processor.
Mix until dough is formed.
Bring together and allow it to rest in plastic wrap for a bout 15mins
Cut and shape into mini sized balls.
You may now prep the glaze you may choose to use honey which is traditional or even give it an Arabic twist by using Atir Arabic style syrup . Just heat up honey and orange juice in a small pot to dissolve place in bowl.
Heat oil up and fry the dough balls a few at a time they will expand and float to the top. once it floats and becomes a golden brown you may remove with a slotted spoon and place into the sweet honey.
allow to soak for a few then again transfer to a serving plate.
repeat until all dough balls are fried. top with sprinkles. If you choose to use atir you may sprinkle with crushed pistachios. Small note don't make these day before you have guests I made that mistake because someone told me they should keep well but they were wrong.lol.
