Spiced Carrot Cake


2 cups of flour
3 cups shredded carrots
3 eggs
1 teaspoon baking soda
1 cup oil
1 1/2 cups sugar
2 teaspoons cinnamon
1/8th teaspoon ground nutmeg
1/2 teaspoon ground cardamom
1/2 teaspoon ground ginger
1/8th teaspoon ground clove
6 chopped dates
Pinch salt
1 cup chopped nuts (Any you like walnuts, almonds even hazel nuts!)

How2:
With baking I always like to start with the dry ingredients then add wet. So mix sugar, flour, baking soda, salt, spices set them aside.
to this add carrots, oil, and beat eggs.
mix well to combine all the ingredients.
Preheat oven at 350DF.
Place into two 8in cake pans or one 13x9in pan.
Bake for about 40-45mins until knife comes out clean.
Cool and serve as is or with frosting.
