This recipe is good for about 3lbs of chicken
2 tablespoons of good quality paprika
5 cloves crushed garlic
1 cup Greek yogurt
1 cup of fresh squeezed lemon juice
1/4 cup olive oil
1/4 teaspoon mustard
1 teaspoon black pepper
1-2 teaspoons of lemon zest or 2 large pieces of just the yellow part
salt to taste (Added before cooking not in marinade)
In a bowl or a bag Add all ingredients except lemon and salt.
mix well to combine.Add lemon juice and mix again.
Add this mixture to the chicken to the chicken and marinade from 4-24hours.
Add the salt before you cook if you add this in the marinade it will draw out the water and make the meat dry.
You may cook this any Way you like on the stove top,broiler, or on skewers on the grill.
ENJOY!
Tip: you may add hot sauce or fresh thyme to this.
