Almond pilaf

1 cup basmati rice
1 teaspoon salt
2 cups water or stock
1/2 cup almonds
2 tablespoons oil

How2:

In a pot add oil, in med-low heat saute the almonds until they are golden brown.
Remove the almonds be leave the oil in the pot.
To the pot add water, salt bring to a boil.
rinse and strain the rice, add to the boiling pot.
wait for it to come to a boil again, reduce heat to low,cover and cook for 15-20mins until the liquid in the rice evaporates an the rice is fluffy.
turn heat off, leave the pot covered on the stove for about 5 mins to allow all the moisture to redistribute.
You may add the nuts back in or place on top.
The reason i called this Almond rice is because the flavor of the oil develops a nutty taste after frying the almonds giving it that special taste.
