1& 1/2 cups basmati rice
2 cups water
1 teaspoon annatto (achiote) powder
1&1/2 teaspoons salt or 1 1/2 bullion cube
1/2 small onion diced
1 cup frozen mixed vegetables
4 cardamom pods
oil to saute
How2:
In a bowl clean the basmati rice, strain the liquid then add warm/cold water to allow the rice to soak. (This is why I used less water in this recipe if you choose not to soak the rice you may add an addition 1 or 1/2 cup water adding to much will cause the rice to be mushy)
In a pot add oil, on med low heat saute the onions until soft.
Add the cardamom pods, followed by the mixed vegetables. mix well and saute until they thaw out.
Add the annatto (achiote) color(If you don't have it you may use Amarillo powder or a natural spices used to color rice like tumeric.)
Add the salt or bullion cube.
Followed by water. Bring to a boil.
Once water boils add the rice. wait until it comes to a boil again and then you may lower the heat and cover the rice.
Cook for about 20 mins. once u notice the water is beginning to dry off the rice you may turn the heat off and leave the pot of rice covered on the hot stove to allow it to finish cooking and redistribute the moisture. This forms a much more fluffy rice.
