1 (20oz) can chickpeas or 2 (10oz) cans
1 (10oz) can fava beans
1 1/2 lemon juiced
4 -5 cloves garlic
1/4 cup olive oil
1 1/2 teaspoons salt
1/8th cup chopped parsley
1/2 cup water
How2:
In a pot add the cans of chick peas, and fava beans, followed by 1/2 cup water.
In a bowl crush the garlic with the salt, add lemon juice and olive oil. set aside.
Place on a med -high heat. until it boils.
Allow it to simmer for about 15-20mins until the liquid appears to be evaporating be sure not to cook it all off.
Once it appears to be slightly evaporated, reduce heat on low.
You may place some of it into the bowl of lemon,garlic,and olive oil.
To the remaining with a fork or the garlic crusher squash down on my chickpeas and fava beans mixture. Don't over squash it you want it to be slightly chunky.
Add the squashed fava bean mixture to the rest of the mix in the bowl.
Mix well to incorporate the lemon and garlic well.
Taste to see if you like more lemon or salt (Each person has their preference)
garnish with the chopped parsley.
Note: This is a traditional Lebanese breakfast dish, you may enjoy it with pita bread, a drizzle of olive oil on your plate and a nice plate of fresh vegetables like sweet onions,tomatoes, Arabic pickles and mint leaves. wash it down with a nice cup of tea. ENJOY!
