1 cup rice
1/2 cup frozen vegetables
1 +1/4 teaspoon salt
2 cups vegetable or chicken broth
2 tablespoons diced white onion
1 tablespoon oil
How2:
Wash the rice set aside.
In a pot add the vegetables, oil. saute for a few Min's to allow them to get heated.
Add 1/4 teaspoon of salt to the vegetables.
To the pot add the rice followed by the stock this does not make a difference when you add the two.
Bring the stock up to a boil add the remaining salt.
Reduce once it boils cover and allow it to cook for about 20-25mins.
Once you see that the rice is about to finish cooking (looks soft and the rice has expanded) and it has less liquid on it. turn the heat off and allow the pot to sit on the stove covered for a few Min's until the rice is done. This allows it to become fluffy.
Serve with anything as a great side dish.
