Daqos Sauce (Arabian Gulf Tomato Sauce)

1 teaspoon oil
2-3 cloves crushed garlic
1 shallot (optional)
3 med-large tomatoes
1 tablespoon tomato paste
1/2 teaspoon khaliji spices
Salt
pepper
Boiling water
Hot sauce(Optional)

How2

  • To begin you must peel the tomatoes this is simple. Take each tomato and with a knife make a cross or X at the top you don't have to cut deep just enough that its cut a little.
  • Place in a bowl. cover with boiling water. 
  • Leave for a few mins while your prep the rest of the recipe. This makes the peel come off with no issue.
  • In a pot add oil on med-low heat saute garlic and shallot for a few secs you don't want to brown you just to get the flavors going add some pepper and a little pinch of salt.
  • remove form heat.
  • After peeling the tomatoes cut them then add to the pot.
  • Place back on the heat on med-high heat cook until tomatoes start to cook.
  • Once this happens you may now puree the tomato mixture. 
  • Place the puree back on the stove top add salt, the khaliji spices.
  • Followed by the tomato paste.
  • Bring to a boil, then lower temp cook for about 15mins until a nice sauce forms.
  • Taste to see if you need more salt or if you prefer more spices. 
  • You may also add hot sauce if you like your sauce spicy.
ENJOY! serve with your favorite khaliji rices, chicken, lamb, beef, or  fish.
