Roasted Spiced Vegetables

4 medium potatoes diced
1 butternut squash diced
1 tablespoon grated ginger
5 cloves chopped garlic
3 tablespoons olive oil
4 large carrots cut into coins
salt
Spices:
1 teaspoon cumin
1/2 teaspoon ground coriander
1 teaspoon paprika
1/4teaspoon black pepper
1/8th teaspoon ground cloves
1/8th teaspoon ground nutmeg


How2:
Prep all of the vegetables try to get them about the same size for even cooking, preheat the oven to 350df
place butternut squash,carrots,potatoes into a pan.
add the spices followed by the garlic and ginger.
add the oil, salt and mix well.
cover with foil bake for about 40mins or until all the vegetables are cooked and tender. remove the foil and allow them to brown. sever as a side or eat it as is. Enjoy!
