Whole Baked Turkey

1 Turkey
2 onions cut
1 pack celery hearts
3-4 potatoes, cut in 1/4's
Brine:
1 gallon water
5 tablespoons poultry seasoning
1 cup kosher salt
1/8th cup sugar
2 bay leaves
1tablespoon black pepper
Bag and container to hold Turkey

How2:
Brine:
In a pot add about 5 cups water on high heat
To the water add,  the poultry seasoning,black pepper, bay leaves.
Add in salt, and sugar mix until it its desolves. allow it to simmer to let the flavors develop. This takes about 15mins. once its done remove from heat allow it to cool down.
Get a large container one that will fit the turkey in yo may use a huge stock pot. line it with a huge bag (i used cheap garbage bag.
To the container add the turkey, followed by the reaming water and the spiced water. be sure its enough to just cover the turkey.
close the bag and allow it to sit in the fridge for at least 24hours.
Preheat oven to 325df
Once the turkey is ready place on a large baking pan add some of the celery and onions into the turkey cavity, place remaining onions and the potatoes around the turkey.
Place a sheet of foil over the turkeys breast place in the oven. bake according to the cooking chart bellow time depends on the weight of the turkey. I baked a 8lb Turkey so that's between 3-4 hours. once its almost done you remove the foil to let it brown. Before carving allow it to rest for about 5-7 mins. Serve with any side dish! ENJOY!
