4 small- medium sized yukon gold potatoes
1 teaspoon salt
1/4 teaspoon pepper
1-2 scallions
1 small onion or 2tiny onions
1/4 cup four
3-4 tablespoons water
1 egg
oil to fry
How2:
Get your potatoes and other components ready peel potatoes and dice them .
Place the potatoes with,onion, green onion, some water into a blender( in the picture bellow i happen to be using the magic bullet).
puree them until its a liquid like consistency no huge chunks or pieces.
once yo It may take a few batches to get the potatoes to the right consistency. I did 2 batches of pureed potato onion mixture.(NOTE:The water helps it get going).
Place the mixture into a good sized bowl.
To the mixture add 1 beaten egg,flour,salt,pepper.let the mixture sit for about 4-5mins to let the four slightly thicken the batter.
While the batter rests preheat a large skillet filled with a good amount of oil you don't want it to deep but not to little.
Once the oil it heated on high heat. Using a large tablespoon pour out the potato mixture into the hot skillet.
Fit as many as you can remember each pan is different.
Cook until golden brown, this takes about 15mins on high/med heat depending on your stove.
Once the side is golden brown flip to the other side and cook again until it becomes golden brown.
Once they are ready you may place them on a plate, lined with paper towels to remove extra oil.
Repeat the process of adding batter and cooking until the mixture is all gone. ENJOY!
NOTE:This recipe makes about 25 pancakes, you may double the recipes and cook them then place in freezer for when you need them just bake them in the oven until they reheat and crisp up. You may also add other herbs and spices.
