Italian herb and Cheese Frittata

4 eggs
1/8cup milk
1 tablespoon flour
1/8 teaspoon salt/pepper
1tablespoon fresh basil, chopped
1tablespoon fresh parsley, chopped
1 tomato, diced
3 tablespoons Ricotta cheese
2 tablespoons olive oil or butter

How2:
 In a bowl beat eggs, Add in salt pepper
add in milk and flour.followed by tomatoes, mozzarella cheese and the herbs
set aside. heat up a small skillet if you use a larger one you will get a thinner frittata its up to you.
add in oil on med-high heat. once heated add the egg mixture.
before it begins t o coagulate add the tablespoons of ricotta don't mix them in just leave them as is in small clumps on the egg.
once the sides start to slightly brown and it appears the eggs are cooking and its not as runny on the tops you may place the pan under the broiler in the oven for 3-4 Min's until its golden on top. if you don't have this feature you may slightly cover the pan and leave on low heat until it cooks.

you may serve it as is or with some fresh marinara.
