2 cups Cold day old rice.
3 tablespoons diced onion
1 cup frozen peas/corn vegetables
1/4 cup shredded bok choy greens
2 tablespoons dark soy sauce
1/4 teaspoon ginger
1/8 teaspoon black pepper
1 egg ( or egg substitute)
2 tablespoons oil
HOW2:
In a pot on high heat add oil
place the peas,corn,onions and bok choy in.
saute for a few Min's then add rice,soy sauce,ginger,black pepper.
stir it fast tossing it a bit to prevent burning.
at the last moment stir in 1 whisked egg. while you pour in the egg be sure to stir the rice mixture fasts the eggs are small pieces and don't clump in the rice.
