5 chicken drum sticks
1 lime juiced
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon amarillo powder
pinch cayenne or 1 tablespoon hot sauce
1/4 teaspoon coriander and cumin powder
1 tablespoon green Sofrito
Rice:
1 onion diced
2 cloves crushed garlic
2 tablespoons oil
1 tablespoon amarillo powder
1/2 cup green sofrito
2 bay leaves
2 cups rice
4 cups water or chicken stock
2 teaspoons salt
1 tablespoon hot sauce
How2:
1.Marinade chicken in lime juice,green sofrito and spices.
2.In a large pan add the 2 tablespoons oil on med-high heat, place chicken skin side down this allows the chicken to brown up.
3.Once brown lower heat and add onion and garlic sautee for 2-4 mins.
4. Add water or stock,bay leaves,1/2 cup sofrito, amarillo powder, and hot sauce. bring to a boil and simmer on med-low heat for 15-20mins or untill chicken is cooked all the way.
5.wash and strain the rice, add salt to the pot of chicken then place the rice in the pot with the chicken. 6.once the contents of the pot comes to a boil reduce heat to low,cover and cook for 20mins.
7. Once its done fluf with a fork.

Tips: you may add peas,corn or beans to this rice and you may also make it meatless by substituting chicken stock with vegetable stock .
