Chicken:
4 chicken legs
1 cup chicken broth
2cups water
salt and pepper to your likening
1/4 teaspoon cayenne
2 tablespoons Jamaican jerk seasoning (or any of your favorite spice mixes)
1 bay leaf
1/2 teaspoon paprika
1/2 teaspoon sweet or smoked chili powder
Coating:
1 1/2 cup flour
seasoned with 1 teaspoon each
Jamaican jerk seasoning (or spice of your choice)
paprika
black pepper
chili powder
salt
1/4 teaspoon cayenne
1 egg to help bind the coating
Fry: 1 cup oil or Shortening ( shortening is more traditional)
HOW2:
1. In a pot add The Ingredients under CHICKEN the broth,spices bring to a boil add chicken cook for 20 mins or until chicken is cooked but not tender.
2. season the flour with the ingredients under COATING mix it together.
3. once the chicken is cooked reserve some of the cooking liquid allow it to cool down and mix in the egg this will be used to help the coating stick coat. dip the chicken in the egg sauce mixture then place in flour.
4. coat it evenly.
5. allow it to stand a few mins while you heat up the oil on med-high the flour will become moist this is what gives it the crunchiness.
6. place the chicken in the oil a few at a time don't overcrowd the pot or it will be soggy if chicken is browning to fast place on med heat.cook until its golden on that side .
7. once one side is cooked you may flip to the other side and continue cooking. this whole process may take 15-20 mins depending on the size of the legs.
8. remove and drain on paper towel or a stainer to remove extra oil.
Serve with any sides! ENJOY!
