Pumpkin Kibbie (Kibeet laqteen)


Outer part
2 cups cracked wheat
2 cups cooked pumpkin or squash
1 cup flour
1 onion grated
1 tablespoon kibbie spices
1 teaspoon salt
2 cups warm water
Filling
1/2 teaspoon kibbe spice
1 cup chick peas
1/2 cup chopped dandelions or spinach
1 onion diced
1/2 teaspoon salt
3tablespoon oil
1/2 cup pine nuts



HOW2:

In a bowl add cracked wheat and water allow it to become soft ,then strain it.

place cracked wheat in a food processor ,add kibbie spice, onion, pumpkin,salt and flour. process until a dough is formed if you need you can add more flour.



Filling:


on med low heat saute onions,and dandelions until onions are transparent and dandelions are wilted add pine nuts saute until they are golden,add spices remove heat and set aside Add chick peas,

whole or you may dice them.


To make kibbie: there is 2 ways of making kibbie there is


WAY1: iras kibbie (the kibbie balls)

have a bowl of water ready to soak hands form a hollow ball place filling and pinch end form it like a football shape. freeze them on a tray then you may store them in zipper bags fry them in hot oil.


WAY2: Kibbie bi suniya (Flat kibbie in a sheet pan) easier way.


in a baking 9x13 baking dish add some oil, spread half the layer of pumpkin mixture. then spread over it all the filling. top with remaining pumpkin topping cut into squares or diamond shapes. make a small finger indent in the center add some more oil to the top and bake in a oven on 350DF for about 30Min's.
