Chicken for 2



1/2 of a whole chicken breast,cut into strips.
1 small onion,sliced.
1/2 green pepper, sliced
1/2 med Tomato, sliced.
spices: 1/2 teaspoon of each:
curry,ginger,garlic,black pepper.
1 1/2 tablespoon tomato paste.
1/2 chicken cube.
1 tablespoon mustard.
oil spray
juice of 1/2 lime
1/4 cup water


How 2:
preheat oven or toaster oven to300df
mix mustard,spices,chicken cube and tomato paste.
add chicken and toss.
in the skillet on med-low spray with oil add the onions and green peppers, saute for 15 mins add chicken. Add water simmer for another 15 mins add tomatoes and lemon juice once chicken is cooked finish cooking for another 5mins. serve alone or with white rice.
