Whole Baked Chicken with fries ( Tajin)


Tajin
1 whole chicken cut in ½
2 tomato's cut into quarters
3 onions cut in thick rings
1 ½ bell pepper any color you like chopped
2 potato's piled and cut into fries
Mix the Charmoula and set aside.
¼ cup black Moroccan olives.


Charmoula
½ cup Parsley.
4 cloves crushed garlic.
3 tablespoons lemon juice.
Black pepper/Salt to your taste.
Table spoon of each Cumin,Coriander,Turmeric,Ginger powder.
¼ cup olive oil or canola oil.

How 2:
Mix the charmoula after making scores in the chicken rub the charmoula all over and allow 2 marinade for a min of ½ hour . be sure to save some for the vegetables.
Place chicken in the bottom of the tajin. Begin to layer the onion and bell pepper s on top with the rest of the charmoula mix. Bake at 400 F for 1 hour.
Before the chicken is done deep fry the potatoes and place on paper towel to soak up extra oil.
Once the tajin comes out top with olives, tomato's ,some cilantro ,and fries.
Enjoy with bread ,cous cous or rice.
