Pistachio Cookies

1 ½ cups pistachios chopped
2 ¼ cup flour
½ teaspoon salt
1 teaspoon ground cardamom
1 cup butter room temp
1 cup sugar
2 egg yolks
2 egg whites
1 teaspoon vanilla
2 cups melted white chocolate

HOW 2:
In an electric mixer beat butter , sugar and egg yolks on high
Spoon sides to be sure it’s mixed well an dot get what may have splattered
Add flour , cardamom , continue to mix on medium until dough is formed
Remove dough ,
In a separate bowl beat egg white with fork ,
To assemble cookies take a piece of dough roll into 1 inch ball
Coat with egg whites add in plate of chopped to pistachios to coat cookie assemble in baking sheet repeat until dough is finished .before baking poke with finger to dent in the center of the cookie ball . Bake for 12 mins or until golden in a 350 degree oven.
When they are done and cooled prepare the white chocolate by melting it in double boiler ( place a glass bowl over pot of hot water on low heat until melted and shiny . turn heat off but leave bowl on top until your ready to use , place melted chocolate into a plastic zip pae cut top and fill each center of cookie drizzle with remaining chocolate and serve with tea or coffee.
