Cilantro lime grilled chicken


1 bunch of cilantro
5 garlic cloves, peeled
1 shallot, roughly chopped
1/2 Serrano pepper, seeded and chopped (OR CHILE OR UR CHOICE)
1 tablespoon cumin
1/4 cup fresh lime juice
1/4 cup olive oil
1/4 cup vinegar
1/2 teaspoon freshly ground black pepper 1 teaspoon salt
4 chicken leg quarters (or 6 pieces chicken thighs and legs, bone-in and skin-on)
Salt and freshly ground black pepper .

HOW 2:
in a blender or food processor add lime, olive oil, vinegar,cumin, Serrano pepper,shallots,garlic,cilantro,salt pepper and blend until its smooth . in a plastic zip bag add chicken, and marinade close and allow it to marinade or 1 hour at the least 24 hours at the most( that's what i do)

Preheat the grill to medium.
Remove meat from marinade, Lightly season the chicken pieces with additional salt and pepper on both sides. Place the chicken on the grill and cook for 8 to 10 minutes on the first side. Turn and cook an additional 8 to 10 minutes. Turn chicken, to keep from burning cook for about 25 to 30 minutes total for thighs and legs and 35 to 40 minutes for chicken leg quarters. Remove chicken from the grill , Garnish with lime wedges and chopped Cilantro

Tip: serve with rice . if your a breast meat fan u can make this simple with chicken kabobs, use on seafood as well.
