2 1/2 cups mashed potato
1/2 onion diced
1/4 bell pepper diced
1/2 cup carrots
1 teaspoon gram masala
1/2 teaspoon turmeric
1 teaspoon ground ginger
1/2 teaspoon cumin
1/2 teaspoon ground coriander
1 clove crushed garlic
2 tablespoons chopped fresh cilantro
bit oil
salt/pepper
2 teaspoons water
how2:
In a pot add bit of oil begin to saute onions,peppers. add ginger garam masala.
Add carrots, 2 teaspoons water, saute on low.
add remaining spices.cook until vegetables are soft. add in cilantro at the end mix well.
In a bowl place mashed potato, pour the spiced vegetables over it.
mix well taste for salt. adjust as needed.
Set aside to cool before using.
