Stuffed Zucchini Soup

This is a spin off of Traditional Lebanese dish called Kosa Mihshi(Stuffed Zucchini) which is cooked in a tomato broth. To make it easier I made it into a soup.
2 zucchinis chopped
1 onion diced
2 tomatoes diced
1 cup rice
1lb ground beef
3 1/2tablespoons tomato paste
6cups water
1/4 cup oil
1/2 teaspoon Cinnamon
1/2 teaspoon allspice
1/8th Teaspoon nutmeg
2 bay leaves
Salt/Black pepper

How2:
Get all of the vegetables ready. In a pot add oil and begin to saute ground beef, with onions. Add a bit  of salt and pepper.
For much even bits of ground beef once cooked you may pulse a few times in a food processor you don't want to mash it just to form smaller grinds.
add zucchini saute until it begins to cook.
Add tomato,tomato paste ,spices. Stir well then add liquid.
Bring to a boil be sure the tomato paste is dissolved.cook for about 15mins until you notice the vegetables begin to start cooking.
Add rice salt and pepper bring to a boil then cover,once it comes up to a boil reduce heat to med-low cook for 20-25mins until the vegetables are tender, and the rice has cooked.
Serve up into bowls I garnished mines with a bit of paprika you may add hot Chile for a spicy version ENJOY!!

TIP:you may use any stuffed vegetable for this soup,cabbage,eggplant,even bell pepper or potatoes they make a great simple soup especially if you don't have the time to stuff the vegetables.
