Simple Chicken Marag (Made in pressure cooker)

1 whole chicken (cut up)
2 onions sliced
6 cloves chopped garlic
1/2 cup chopped cilantro
water
2-3tablespoons tomato paste
2 tomatoes chopped into 1/4's
Spices:
2 bay leaves
1 small cinnamon stick
6 cardamom pods
5 strands saffron
2 teaspoon mixed Arabian gulf spice
1/4 teaspoon cumin seeds
4 cloves
2 bullion cubes
1/8th teaspoon black pepper

How2:

Clean and pat chicken dry.
In the pressure cooker, add onions,garlic,tomatoes.all of  the spices.
Add chicken mix together.
Add enough water to slightly cover chicken but not completely submerged.
Dont add the Tomato Paste yet it could thicken broth to soon burn the mixture in the pot.
Allow it to boil on high then cover the pot. cook on med-low for about 15-20mins untill chicken is tender.
Once this occurs you may remove cover according to your pressure cookers standards.
with lid off place pot back on stove add tomato paste allow to boil for a few mins to thicken sauce.( if the chicken seems like its very tender and will fall off bone you can remove chicken from pot then add tomato paste to the stock and simmer then add chicken back in.)

Serve with rice. Enjoy!


NOTE: You can make this without pressure cooker but you would start by sauteeing vegetables add spices, chicken ,liquid and the tomato paste. cook on med-low heat for about 35-40mins until chicken is tender and the sauce thickens.
