Garlic herb Tomato sauce

1 lb can diced tomatoes
1 large fresh tomato
1 med onion
4 cloves garlic,crushed
1 tablespoon mixed Italian herbs
3 tablespoons tomato paste
2 1/2 cups water
pinch salt black pepper
olive oil
1/8th teaspoon baking soda( remove extra acidity)

how2:
In a pot add some olive oil on med-high heat.
Add onions slowly cook until they become translucent.
Add garlic, and the herb seasoning.
To the pot add in the can of tomatoes,water,black pepper,tomato paste.
In a blender or processor add some of the sauce from the pot with the tomato and puree. mix well.
wait for it to come to a boil, cover reduce heat low cook for 40mins-1hour. It will cook down and become thicker. taste and adjust any salt and pepper you like.
at the end finish it off with the baking soda to get rid of the extra acidity( you may use a dash of sugar or even place a piece of carrot in the sauce to stop the acidity as well.)
