Vegetable Patch Omelet

5 eggs or 1 1/2 cups egg substitute
3-5 cherry tomatoes, sliced in 1/2
1 potato diced
1/2 bell pepper diced
1 green onion
2 cloves garlic
1/4 cup parsley
1 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil

How2: in a food processor or mixer add eggs,herbs,and garlic. mix until smooth and the herbs have been combined.
Add the tomatoes to the eggs. set aside.
In a skillet heat up some oil add the potatoes on med-low heat cook until translucent and almost brown once its almost brown lower heat add in green peppers.
add to this the salt,pepper, to the eggs and some of it to the potato and green pepper.
Once the potato/peppers are cooked. increase the heat to med-high add the egg mixture.
if the pan is to hot you may reduce to heat to prevent burning cook for about 10mins. once the eggs looks like its becoming solid lower the temperature to very low.
Add a piece of foil loosely on top to cook the top, or place under broiler to finish.
serve as is or with pita bread.
