Spinach Bake

1 (10 oz) bag spinach
1 onion,diced
2tablespoons herb cream cheese
1 cup diced caned tomato
1 cup of the tomato juice
2 cups shredded Italian cheese, save a 1/4 cup for topping
1 cup flour
2 eggs
1 teaspoon baking powder
1 teaspoon of salt and black pepper
3 tablespoons olive oil

How2:

for this recipe i had previously blanched my spinach in hot water then placed them in ice cold water to stop them from cooking, i then chopped them and pressed extra water from them. If you cant find fresh spinach you may use frozen chopped spinach be sure to thaw and remove excess water.

*In a bowl add 2 eggs, whisk the eggs until they become bubbly and frothy.
*To the bowl add the flour,baking powder, salt,pepper and the cream cheese.
* Mix it a bit, Add in the tomato sauce. mix until it comes together.
*In a pot add some of the olive oil saute the onions on med-low heat until slightly golden.
* Once the onions are golden, add the spinach and tomato's.  cook for 5-10 Min's on low heat.
*Allow the mixture to cool down, divide it in 1/2. Place half in the baking dish with  the remaining olive oil.
* Mix in the cheese into the batter.
* Add the rest of the spinach,onion,tomato mix into the batter.
*Place in the baking dish.  mix it a little bit.
* Top with the reserved 1/4 cup of cheese.
* Bake at 350DF for about 30mins or until a toothpick insert comes out clean.
You may serve with sauce or alone,. Enjoy!
