safron rice with almonds


2 1/2 cups basmati rice.
4 cups water.
1/2 teaspoon saffron.
5 cardamom pods.
1 small onion diced.
3 tablespoons oil & 1/2 cup oil.
2 pinches of saffron.
1/2 cup of peeled and halved almonds.
3 teaspoons salt.

this rice i will put in steps


Step one:


take 2 out of the 3 cups of rice clean it and set it aside.

take the oil and add it 2 a pan on med heat saute the onion until golden. add 3 cups of water and cardamom close lid and allow 2 come to a boil allowing cardamom to infuse into the water.

remove cardamom if its unwanted and add 2 cups of rice, when it comes up to a boil again lower the heat to low cook for 15-20min.


Step 2:


in a smaller pot add 1 cup of water, 1 teaspoon of salt. bring 2 a boil add saffron allow it to infuse you will see the water change color and this beautiful aroma. add the 1/2 cup rice once it comes to a boil lower heat to low and cover cook for 10-15Min's until rice is fluffy.


Step 3:


in a pan add the 1/2 cup of oil when its hot add the almonds cook until golden remove b4 they become dark because they will continue browning once removed from the oil.


Step4:


in a dish mix the 2 rices in small batches to prevent breaking the rice . Top with almonds.
