3-4 cups precooked freekeh
2 tomatoes diced
2-3 small cucumbers
1/4 cup chopped mint
1/2 red,yellow or green bell pepper diced
salt to taste
2 tablespoons chopped scallions
Dressing:
1lemon juiced
2 cloves crushed garlic
pinch salt,pepper
1/4 cup olive oil

Follow my freekeh Pilaf. recipe
allow it to cool you may even make this with leftovers and adjust the amounts to what you have remaining.
prep all of the vegetables place into a mixing bowl
in a bowl or empty jar mix the dressing and shake well.
pour over the freekeh and vegetables, and toss.
serve chilled as a great side to any summer meal.
ENJOY!
Note:You may use 1/4-1/2 cup of your favorite Italian dressing.
