1 large medium sweet potato
2 cups fresh cut corn
15oz black beans
1 1/2 cup of your favorite organic jar or fresh salsa
3 cups water or enough to cover the vegetables.
1 teaspoon organic tomato paste
1 tablespoon ghee/ or coconut oil
Spices:
1 teaspoon Chile powder(Not spicy)
1 1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon black pepper
1/8th teaspoon cayenne pepper(Optional)
Sea salt
How 2:
In a pot on med heat add ghee or coconut oil
add fresh corn,saute for 2 mins.
Add sweet potatoes,your choice of salsa.
Add water,spices,tomato paste,followed by the black beans and salt.
bring up to a simmer cover and reduce heat to low.
cook for about 45mins until the sauce reduces slightly and the potatoes are cooked.
serve up hot with any topping I enjoyed mines with some guacamole and corn tortillas.
