3 lbs chicken breast(cut in half)
3 eggs+ 1/8th cup water
2 cups breadcrumbs
salt/pepper
1 1/2cup tomato sauce
1 cup mozzarella cheese
1/2 cup Parmesan cheese
1/8th teaspoon Italian herb seasoning for garnish

Cut chicken in half to make thinner fillets.
set up the breading by placing breadcrumbs in a flat deep dish, beat the eggs with water season with a little pepper.
Season the chicken with black pepper and salt.
Dip chicken into eggs then into bread crumbs to coat.
Take breaded chicken place on tray. Repeat these steps until all of the chicken is coated. Place in the freezer for about 15-20mins to allow the breadcrumbs to stick to the eggs.
In a deep skillet add about 1/2 cup oil to fry the chicken cutlets.
When the oil is hot fry the chicken on med-low heat if the oil is to hot the bread crumbs will burn and the chicken will be raw. cook about 5-10mins on each side.
repeat until all of the chicken is cooked.place on paper towel to remove extra oil.
In a deep glass baking dish. place some sauce on bottom.
Make a layer of chicken ,topped with some sauce and cheeses. (reserve some cheese for the top)
repeat another layer with chicken,sauce,cheeses. until you have finished all the layers.
Bake at 350df for about 35-40mins until sauce has thicken and is not so watery. towards the end you may add the remaining cheeses on the top to melt down garnish with Italian herb spices.
Serve with pasta,with bread or as is.
