2-3 lbs beef stew
1 envelope packet of goya sazon
2 onions
1 pack baby tomatoes
water
1 chicken bullion cube
2 tablespoons oil
1 pack sliced mushrooms or 2 small cans.
1/8th teaspoon salt
1 tablespoon cornstarch
Marinade:
1 envelope packet of Goya sazon
2 tablespoons olive oil
1/4 cup lemon juice
1 tablespoon paprika
1 tablespoon cumin
How2:
Work on marinading the meat, add the lemon,garlic,sazon,paprika,cumin , and oil.
Mix together well to form a spice paste.
Add meat, Marinade for at least 1 hour.
In a pressure cooker with lid off you will begin to build the base of the stew(If you don't have one you may follow this recipe just leave it in low heat for about 1 hour or more for the stew meat to become tender.)
Add oil to the pot, add onions saute until they are tender, you may add 1/8th teaspoon of salt to the onions this will allow them to sweat and release their liquids . Once they are sauteed down and not to brown you may remove them from the pan.
In the hot pan add the beef, sear it on both sides.
once you sear the meat add the onions back in.
Add mushrooms, tomatoes, mix them together.
Add water just enough to over the meat and vegetables.
Add the packet of Goya sazon.allow the flavors to mellow together,
Save about 1/4 cup of the liquid aside.
Cover your pressure cooker and secure it well. place on high heat for 2 mins then lower heat to low.
Cook for about 30-35mins until beef is tender.
Once your pressure cooker is off and settled remove the cover.
(If your not using a pressure cooker allow it to cook for about 1-2 hours so the beef is tender you may cook it even longer on low heat)
Take the reserved sauce and mix in 1 tablespoon of cornstarch to form a sauce.
Add this to the pot. on med-high heat heat the pot (without lid) so the sauce thickens up.
Serve with rice or as is.
